Cooking Instructions

1. Slice the fish into medium pieces and set aside.
2. Heat oil in a large pan or pot.
3. Add chopped onions, garlic, and ginger paste. Sauté until golden.
4. Stir in turmeric, chili powder, and curry paste. Cook for 2–3 minutes.
5. Pour in coconut milk and fish sauce, then add a little coconut sugar.
6. Add chopped vegetables and let them simmer until tender.
7. Gently add fish pieces and cook on low heat until just done (do not overcook).
8. Adjust seasoning with salt and water as needed for consistency.
9. Serve hot with steamed rice or flatbread.
